Thanksgiving Lasagna, Take 3

Dare I say it? It's time again for Thanksgiving Lasagna.

I'm not a huge fan of leftovers. I think most foods should be eaten immediately/soon after being made. A beautiful meal just doesn't look or taste the same the next day. There are exceptions -- some foods are even better after the flavors marinate/merge overnight, but for the most part, I hate eating re-heated food.

I'm not sure why I have such an aversion to leftovers, but I refuse to eat leftover Chinese food and our fridge has to be purged often of forgotten doggie bag containers that have been waiting all hopeful on the shelf for days...

But, since I adore Chris, we've made his idea for using up Thanksgiving dinner leftovers a bit of an annual event (I say "a bit" because we weren't able to do it this year).  If you still have leftovers from your Thanksgiving feast, check out Turkey Lasagna 2009 and Turkey Lasagna 2010.

Thanksgiving Leftovers...Lasagna, Again?

I'm not sure if your Thanksgiving leftovers are gone yet -- I didn't have any as we were guests at two separate, wonderful dinners this year--but the idea of Chris's Thanksgiving Lasagna came up again, and we actually made it for my sister/parents last week. We weren't able to stay and sample it, but from what I hear it was pretty good.

Here's what we did:

Take a lightly buttered lasagna/casserole pan and cover the bottom with the leftover stuffing, reserving a few tablespoons for the topping. Then, add a layer of shredded turkey breast, a light layer of cranberry sauce, and top with egg noodles and gravy. Sprinkle the extra stuffing on top, add some fresh pepper and wait for all the gravy-goodness to soak into the bottom before heating through and enjoying. 

You can of course do this with any combination of your leftovers -- mashed potatoes, green beans, sweet potatoes, etc.  The sky's the limit.

Thanksgiving Lasagna ???

So, my beloved, Chris, has an idea that he thinks will revolutionize Thanksgiving dinner forever--or at least the leftovers. He's long been eager to move beyond turkey and stuffing (yawn) at Thanksgiving and into wilder territory. (I believe one year his family had Bok Choy on their holiday menu.) Thus, he has suggested....(drum roll)... Thanksgiving Lasagna.

At first, I thought it sounded gross, but then he tweaked it a bit, and now even has my dad on board, thinking it is a good idea -- so who knows if this is what we'll end up having next Friday?

Thanksgiving Lasagna:
Original recipe (c) NTC 2009 --amended by me (because he wants to use lasagna noodles on the bottom and I think that's too many carbs)

Base layer: Stuffing {mix with melted butter to form a crust-like bottom}
Layer: Turkey
Layer: Mashed potatoes
Layer: Cranberry sauce
Layer: Stuffing
Layer: Gravy
Layer: Turkey
Layer: Sweet potatoes
Layer: Green Beans
Layer: Stuffing
Top with Gravy, serve with holiday salad (greens w/cranberries, pecans, apples, goat cheese, etc.) and hot buttered rolls.

Maybe he's on to something...then again, maybe he should stick to making the Attitude Adjustments. Let me know what you think -- and if you're willing to try it.
