Make a Date with Cookie Cake

This tasty recipe using the fantabulous flavor combination of dates, cardamom, pecans, and crystallized ginger can be turned into cookie bars or my favorite -- a cookie cake. It's not your usual cookie recipe, but it is an incredibly satisfying treat. Yum!



Date Cookie Cake
Ingredients:
1 stick butter
1/2 cup light brown sugar
1/3 cup granulated sugar
2 TBS honey
1 egg 
1 tsp vanilla
1 cup all-purpose flour
1 tsp cinnamon
2 tsp ground cardamom
1/4 tsp salt
1 cup chopped, pitted dates
1/2 cup pecans, chopped (toasted if you  have time)
1/4 cup crystallized ginger, chopped (I used chocolate-covered ginger candies)

To Do:
  • Preheat oven to 350 degrees. Lightly butter an 8" round cake pan, and set aside.
  • Cream the butter, sugars and honey together until well blended.
  • In a small bowl, whisk together the egg and vanilla. Add to the butter/sugar mixture.
  • Gently stir in the flour, spices, dates, pecans and ginger candies. Don't overmix.
  • Press the "cookie" dough into the greased pan.
  • Sprinkle the top with a pinch or two each of sugar and cinnamon.
  • Bake about 30-40 minutes or until lightly browned.
  • Cool completely and cut into bars or slices. 

  • Warm before serving, if desired, and top with ice cream, whipped cream, or a drizzle of honey.
