Quick Breakfast Bake

I'm not a big breakfast fan -- we've talked about this, so I won't get into the details.  But, I recently noticed that my fridge was overflowing with farm-fresh eggs that needed to be used up, so I decided to take drastic measures.

I threw together this lovely egg, sausage, bacon and cheese bake.  Served with toast and some fresh fruit, it was delicious breakfast made simple. The secret ingredient is the Maple Zucchini Relish that I picked up in Vermont last month. Sweet and tart, it goes well with the sausage and gives the dish a little bit of zing. (And who doesn't need a little bit of extra zing in the morning?)

Bacon, Sausage and Cheese Breakfast Bake
1/2 pound Italian sausage (chicken, turkey or pork is fine)
4 pieces of bacon, diced
2 TBS Maple Zucchini Relish
8 eggs
1/2 cup light cream
1/4 cup shredded cheddar cheese
1 tsp salt
1/2 tsp pepper
2 tsp Italian herb mix

To Do
  • Preheat the oven to 375 degrees.
  • Remove the sausage from its casings, crumble and brown in skillet with bacon until cooked through. Stir in the relish. Let cool, then place in the bottom of a lightly greased casserole dish.
  • Whisk the eggs, cream, cheese and salt/pepper in a bowl and pour over the sausage mixture.
  • Sprinkle with the Italian herbs and transfer to the oven.
  • Bake about 30 minutes, until puffed and browned.
