From the Gourmess

Sorry for the delay. I was cooking this week, I just didn't have time to post until now.  We had some company this weekend (thanks for coming, L!) and another crazy week at work, so I am finally able to upload pics, etc.

Also, to be honest, I was starting to feel a bit overwhelmed with this project. I was feeling the pressure of maybe not finishing in time, not having any free time to do anything else but cook, and wasn't enjoying the recent recipes, etc. So, I decided to take a break and go back to the school of La Petite Gourmess.  I grabbed some items from my pantry/fridge and made a couple of my favorite, no-stress dinners.



Black Bean Goodness: Sautée black beans in a paste you make with olive oil, chopped garlic, cinnamon, chili powder and cumin. Add corn, roasted red peppers, grilled chicken, cilantro, a spoonful of salsa and a wee bit of smoky, chipotle chili peppers and serve with brown rice and a sprinkle of cheddar jack cheese for a lovely one skillet meal. (Or, cut some tortillas into small circles with a cookie/biscuit cutter, fill and fold,  and put in the oven for mini soft tacos)



Garlicky Shrimp with Escarole and Couscous: Sear a head of escarole in butter, lemon and garlic until it caramelizes/softens a bit, and then add in bacon and sautée for a few minutes more.  Then, toss in shrimp and red pepper flakes until cooked through and serve over couscous.  With a glass of crisp white wine -- a nice dinner for a warm evening.

Ahhhh.  That's better. 


I am focused again -- so, back to the book!
